Homegrown Strawberries are now here!
To celebrate here is a recipe for Spinach & Strawberry Salad from Linda Hafner’s Cookbook. A delicious salad that shows off the strawberry’s more savory side.
Why not try it while strawberries are so abundant at this time of year?
Salad Ingredients –
8 cups of baby spinach leaves, washed and dried. (Alternatively, you can use a mixture of spinach and torn romaine leaves)
1/4 cup of Vidalia Onion, thinly sliced
2 cups strawberries, washed and sliced
1 cup fresh mozzarella, cubed
Dressing Ingredients –
1/4 cup of olive oil
2 T white balsamic vinegar
2 T orange juice
1 tsp honey
salt and pepper to taste
1/3 cup chopped walnuts or sliced almonds
In a small bowl, whisk together all of the dressing ingredients. (the dressing will keep covered in refrigerator for two days.)
In a salad bowl, combine the spinach, onion, strawberries, and mozzarella. Drizzle with the dressing and toss gently.
Sprinkle with nuts and serve immediately.
